Christmas Cookie Recipe

Ingredients

Cookie Dough:

  • 8 cups sifted all-purpose flour
  • 4 teaspoons baking powder
  • 1 1/2 cups butter (3 sticks)
  • 3 cups sugar
  • 4 eggs
  • 2 teaspoons almond extract
  • 2 teaspoons vanilla extract
  • Colored Icing, recipe follows

Directions

Preheat the oven to 350 degrees F.

In a large bowl, stir together the flour and baking powder. In a standing mixer with a paddle attachment, cream the butter with sugar until fluffy and light. Mix in the eggs, almond extract, and vanilla extract. Turn down the mixer and slowly add the flour mixture, a third at a time to make a stiff dough. Divide the dough into 4 pieces. Use 2 pieces to make cut out cookies, and the other half for the Russian Tea Cakes.

For the cut out cookies: On a lightly floured surface roll out a portion of cookie dough to 1/4-inch thick. Cut out shapes using cookie cutters. Place the cookies on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minutes, rotating cookie sheet halfway through the cooking time. Cool on pans about 5 minutes, and then transfer to wire racks and cool completely before decorating with colored icing.


Colored Icing:

  • 1 cup confectioners' sugar
  • 3 tablespoons water
  • 6 to 8 drops food coloring, plus more as needed (recommended: Seelect Natural Food Coloring)
  • 1/2 teaspoon almond extract
  • Colored sprinkles, optional


In a small bowl, mix the sugar and water to form a thick, smooth icing. Stir in the food coloring to reach desired shade. Drop the icing onto cookies using a small teaspoon, and smooth with the back of the spoon. Make additional bowls for additional colors. Add sprinkles, if desired.

Winter Reminders!

Please Do Not Leave Mats, Stands, Chairs, Toys, Etc. in your Front Door Area. This area must remain clear in the winter season so that we can have clear access while snow-blowing the sidewalks & front door areas. These items will cause damage to the snow-blowers.

Parking - Do Not let your vehicle’s front end hang over the sidewalk! If your vehicle hangs over the sidewalk when staff is snow-blowing both the equipment and your vehicle can be damaged.

Parking – For Maximum Snow Removal….Please remember to rotate your parking spots. This will help staff keep the parking spots and drive areas as clear as possible for everyone.

Going Away? Short Term? Long Term? – Please Do Not turn off your Heat! The pipes can freeze & burst causing serious damage to not only your home but your neighbors as well. The lowest temperature you may put your heat at is 55 degrees.

Don’t Miss The Hammocks at Southern Hills Flu Clinic

The flu is a contagious respiratory illness caused by influenza viruses. It can cause mild to severe illness, and at times can lead to death.

Most experts believe that flu viruses spread mainly by droplets made when people with flu cough, sneeze or talk. These droplets can land in the mouths or noses of people who are nearby. Less often, a person might also get flu by touching a surface or object that has flu virus on it and then touching their own mouth, eyes or nose. If you are interested in getting your flu shot, The Hammocks at Southern Hills is holding a Flu Clinic at our Clubhouse (100 Hammocks Drive in Fairport, NY 14450) on Tuesday, October 12th from 10:00 am to 2:00 pm. No appointments are necessary…just walk in! The Flu Clinic is open to the Public and to our Residents.

Do You Have Renter’s Insurance?

If you rent your home, having insurance protection for yourself and your possessions is important.
